The recipe (chickpea noodle soup) is from this book. It reminds me of chicken noodle soup. I'm not vegan but have enjoyed everything that I've made from it. You can also find this recipe here. I omitted the unusual ingredients (miso and mirin) because my grocery store didn't have them, but it was still tasty. I used udon noodles. I imagine egg noodles would also work.
